The idea for mosaicking trays with legumes or coffee beans was born when I realized that these items, dried beans, lentils, coffee beans, etc were just edible tesserae! They are all small individual pieces put together to make a beautiful picture. And, I love guacamole and chips. This became the perfect way to serve this Tex Mex staple. In addition, these trays can be assembled rather quickly, so the turn around time from production to completion is quick — 2 days!
Doubly serves as a cake plate!
